Strawberry Cake Mix Cookies
Good afternoon, I hope y’all are having a Blessed day. I’ve got my windows and doors open, enjoying a little Indian Summer as Papa used to call this kind of weather. Last week Zaylee was wanting strawberry cookies, which of course I did not have, but I had a strawberry cake mix so we set in to making us up a batch. She decorated hers with white chocolate chips and I left mine plain. This is a simple recipe that’s been around forever using various cake mixes, you may have even made these many times before, but I wanted to share for those that may not have tried using a cake mix to make cookies.
I did all kinds of cooking with my Grandmothers but the one thing I really enjoyed was making cookies with them. I wish I could remember the recipe that Nannie Polly used to make as well as what the actual name of the cookies were. She simply called them drop cookies and I remember there being sugar, eggs, flour and buttermilk. I know there were a few more ingredients but I’ve never been able to find a recipe in any old church cookbook that was close. Daddy remembers the cookies but he doesn’t know how she made them either. Just another of the many things she fixed that went to Heaven with her. I think back then no one really wrote down recipes, Nannie Hembree kept her recipe tins that I inherited and treasure, but so many of the old Southern recipes I grew up never got wrote down in my family. I’ve been able to duplicate many that I enjoyed as a young girl but there’s still a few that I’m just gonna have to wait and ask my Grandmothers themselves about when we meet again. Strawberry “Cake Mix” Cookies
- 1 box strawberry cake mix
- 2 large eggs
- 1/2 C. vegetable oil
In a bowl, stir together the dry cake mix, eggs and oil. Once combined well, use a small ice cream scoop to drop the mixture onto a lightly greased baking sheet. Bake in a 350 degree oven for 10-12 minutes.
