Crock Pot Chicken Parmesan
How to make a Crock Pot Chicken Parmesan ? Good afternoon, it’s an ole dreary and rainy day here in West Virginia but at least it’s not cold as I still have the windows open as long as the rain ain’t blowin’ in them. I put this chicken parmesan in the crock pot first thing this morning and just had a plate (the picture was my husbands plate). It was so good and so easy to make. I do bread the chicken and fry it till golden brown before putting it in the crock pot simply for the flavor and not the crunch. The chicken is moist, flavorful, saucy and cheesy, served over pasta it’s a delicious meal.
I tell y’all it’s days like today that has my hind end wanting to stay in my recliner and do absolutely nothing. I did grab a short nap a few hours ago and I think I could use another one right after I get these dishes done. I can remember Summers spent with Nannie & Papa Hembree and when we would get a good shower of rain you would find Nannie napping over in her chair. Us kids would tip toe through the living room so not to wake her but I think she often napped with one eye open because she saw us every time. Her stories were on in the afternoon and us kids needed to play somewhere besides the living room so she could watch them. I think we were mostly shewed to play so she could hear those stories as the TV volume wasn’t very loud and with all the grandkids together we could raise the roof. Now that I am around the same age she was then I see just how easily it is to nod off when you sit down, rain or not.
Ingredients Crock Pot Chicken Parmesan
- 24 oz. jarred pasta sauce
- 4 boneless/skinless chicken breasts
- 1 large egg
- 1/3 C. milk
- 1 C. panko breadcrumbs
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. garlic powder
- 3 T. veg. oil
- 1/3 C. grated parmesan cheese
- 1 C. shredded mozzarella cheese
- cooked pasta for serving
Easy crockpot chicken parmesan:
Spray your crock pot with cooking spray. Pour the pasta sauce in the bottom of the crock pot and turn on low. Whisk together the egg and milk in a dredging dish the mix the breadcrumbs and seasonings in another. Heat the oil in a skillet over medium high heat. Take each piece of chicken and dip in the egg mixture then coat with the breadcrumbs. Fry them in the heated oil for about 1 minute per side, till golden brown then remove and place in the crock pot (your not cooking the chicken, just browning the coating). Cover and cook for 5 1/2 hours. Uncover and sprinkle the parmesan cheese over the chicken then the mozzarella. Cover and cook about 20 more minutes. Serve over cooked pasta.
